Description
Juicy, marinated Greek lemon chicken skewers grilled to perfection and served with a creamy homemade tzatziki sauce. This Mediterranean-inspired dish is full of fresh, bold flavors and perfect for an easy weeknight dinner or a weekend cookout.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1/4 cup olive oil
- Juice of 2 lemons
- 3 garlic cloves, minced
- 1 tbsp dried oregano
- Salt and pepper to taste
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 garlic clove, minced
- 1 tbsp fresh dill, chopped
- 1 tsp white vinegar or lemon juice
- Salt to taste
Instructions
- In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for 30 minutes to 3 hours in the fridge.
- For tzatziki, combine yogurt, cucumber, garlic, dill, vinegar or lemon juice, and salt. Stir and refrigerate.
- Thread chicken onto soaked wooden or metal skewers.
- Preheat grill to medium-high. Grill skewers for 10-12 minutes, turning occasionally, until cooked through.
- Let rest for 2 minutes. Serve with tzatziki and optional lemon wedges.
