Greek Lemon Chicken Skewers with Tzatziki Sauce

Juicy, marinated Greek lemon chicken skewers grilled to perfection and served with a creamy homemade tzatziki sauce. This Mediterranean-inspired dish is full of fresh, bold flavors and perfect for an easy weeknight dinner or a weekend cookout.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 garlic cloves, minced
  • 1 tbsp dried oregano
  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • 1 tsp white vinegar or lemon juice
  • Salt to taste

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for 30 minutes to 3 hours in the fridge.
  2. For tzatziki, combine yogurt, cucumber, garlic, dill, vinegar or lemon juice, and salt. Stir and refrigerate.
  3. Thread chicken onto soaked wooden or metal skewers.
  4. Preheat grill to medium-high. Grill skewers for 10-12 minutes, turning occasionally, until cooked through.
  5. Let rest for 2 minutes. Serve with tzatziki and optional lemon wedges.
