Ingredients

1 lb ground beef

2 medium sweet potatoes, peeled and diced

1 cup bell peppers, chopped

1 tbsp olive oil

1 tsp smoked paprika

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

Salt and black pepper, to taste

1 cup cottage cheese

Fresh parsley or cilantro, chopped


Instructions

1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, smoked paprika, half the garlic powder, salt, and pepper. Spread on baking sheet and roast 20–25 minutes, stirring halfway.

2. In a large skillet over medium-high heat, cook ground beef with cumin, chili powder, remaining garlic powder, salt, and pepper until browned, 6–8 minutes. Drain excess fat.

3. Add bell peppers to skillet and sauté for 3–4 minutes until slightly tender.

4. Assemble bowls by dividing sweet potatoes, beef, and bell peppers. Add cottage cheese on top.

5. Garnish with parsley or cilantro and serve warm.

Notes

Swap cottage cheese with Greek yogurt or sour cream for a tangier option.
