Perfect for a quick dinner, easy meal prep, or healthy snack. This easy recipe is ideal for anyone seeking new dinner ideas, quick prep meals, or tropical food ideas that don’t sacrifice flavor for simplicity.

Ingredients

1.5 lbs chicken thighs or breasts, cut into chunks

2 cups fresh pineapple chunks

1 red bell pepper, sliced

1 green bell pepper, sliced

1 red onion, sliced

3 cloves garlic, minced

1/3 cup soy sauce

2 tablespoons honey

1 tablespoon rice vinegar or apple cider vinegar

1 teaspoon sesame oil

1 tablespoon grated fresh ginger

1 teaspoon cornstarch (optional)

Chopped cilantro or green onions for garnish (optional)

Instructions

1. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Set aside half the mixture for drizzling later.

2. Place chicken in a bowl or bag, pour in half the marinade, and marinate for at least 20 minutes or up to 8 hours.

3. Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil and lightly grease.

4. Spread bell peppers, onion, and pineapple evenly over the pan. Add chicken, arranging everything in a single layer.

5. Roast for 25–30 minutes, flipping halfway, until chicken is cooked and everything has caramelized.

6. Simmer reserved marinade in a pot and thicken with cornstarch slurry if desired. Drizzle over finished dish.

7. Serve hot over rice, cauliflower rice, or grain of choice. Garnish with cilantro or green onions.

Notes

Marinate the chicken for as long as possible to boost flavor.

Use parchment paper to save yourself from a tough cleanup.

For crispier veggies, avoid overcrowding the pan.
