Ingredients

  • 3 cups rotini pasta
  • 1 ½ cups diced ham
  • 1 cup pineapple chunks (drained if canned)
  • ¾ cup diced carrots
  • ½ cup red onion, finely diced
  • ¼ cup chopped parsley or green onions

For the Dressing:

  • 1 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or sugar
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta in salted water until al dente. Drain and rinse with cold water.
  2. Dice ham, pineapple, carrots, and red onion. Chop parsley or green onions.
  3. In a bowl, mix mayo, sour cream, vinegar, honey, salt, and pepper to make the dressing.
  4. In a large bowl, combine pasta, ham, pineapple, carrots, onion, and herbs.
  5. Pour in dressing gradually, tossing to coat everything evenly.
  6. Chill for at least 1 hour before serving.
  7. Stir before serving and refresh with a splash of milk if needed.
