Ingredients
- 3 cups rotini pasta
- 1 ½ cups diced ham
- 1 cup pineapple chunks (drained if canned)
- ¾ cup diced carrots
- ½ cup red onion, finely diced
- ¼ cup chopped parsley or green onions
For the Dressing:
- 1 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey or sugar
- Salt and pepper to taste
Instructions
- Cook rotini pasta in salted water until al dente. Drain and rinse with cold water.
- Dice ham, pineapple, carrots, and red onion. Chop parsley or green onions.
- In a bowl, mix mayo, sour cream, vinegar, honey, salt, and pepper to make the dressing.
- In a large bowl, combine pasta, ham, pineapple, carrots, onion, and herbs.
- Pour in dressing gradually, tossing to coat everything evenly.
- Chill for at least 1 hour before serving.
- Stir before serving and refresh with a splash of milk if needed.
