Ingredients

  • 1 lb chicken breast or thighs
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt (for marinade)
  • 1/2 cup plain Greek yogurt (for tzatziki)
  • 1/2 cucumber, grated and drained (for tzatziki)
  • 1 garlic clove, minced (for tzatziki)
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice (for tzatziki)
  • 1 tbsp olive oil (for tzatziki)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, chopped
  • 1/4 red onion, thinly sliced
  • 1/4 cup olives (Kalamata or green)
  • Cooked quinoa or brown rice (optional base)
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix 2 tbsp olive oil, juice of 1 lemon, 2 minced garlic cloves, oregano, salt, pepper, and 1/2 cup Greek yogurt. Marinate chicken in this mix for at least 30 minutes.
  2. Prepare tzatziki: combine 1/2 cup Greek yogurt, grated cucumber, 1 minced garlic clove, dill, 1 tbsp lemon juice, and 1 tbsp olive oil. Chill.
  3. Grill or cook marinated chicken on medium-high heat for 5–6 minutes per side. Let rest, then slice.
  4. Prep vegetables: halve tomatoes, chop cucumber, slice onion, and prepare olives.
  5. Assemble bowls: base of grains or greens, then layer chicken, veggies, and a generous dollop of tzatziki.
  6. Garnish with parsley and a drizzle of olive oil. Serve immediately or store components separately for meal prep.
