Ingredients
- 1 lb chicken breast or thighs
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup plain Greek yogurt (for marinade)
- 1/2 cup plain Greek yogurt (for tzatziki)
- 1/2 cucumber, grated and drained (for tzatziki)
- 1 garlic clove, minced (for tzatziki)
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice (for tzatziki)
- 1 tbsp olive oil (for tzatziki)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, chopped
- 1/4 red onion, thinly sliced
- 1/4 cup olives (Kalamata or green)
- Cooked quinoa or brown rice (optional base)
- Fresh parsley for garnish
Instructions
- In a bowl, mix 2 tbsp olive oil, juice of 1 lemon, 2 minced garlic cloves, oregano, salt, pepper, and 1/2 cup Greek yogurt. Marinate chicken in this mix for at least 30 minutes.
- Prepare tzatziki: combine 1/2 cup Greek yogurt, grated cucumber, 1 minced garlic clove, dill, 1 tbsp lemon juice, and 1 tbsp olive oil. Chill.
- Grill or cook marinated chicken on medium-high heat for 5–6 minutes per side. Let rest, then slice.
- Prep vegetables: halve tomatoes, chop cucumber, slice onion, and prepare olives.
- Assemble bowls: base of grains or greens, then layer chicken, veggies, and a generous dollop of tzatziki.
- Garnish with parsley and a drizzle of olive oil. Serve immediately or store components separately for meal prep.
