2 lbs beef chuck roast, cut into chunks

3 tablespoons flour

2 tablespoons olive oil

1 large yellow onion, chopped

3 cloves garlic, minced
 - 
3 celery stalks, chopped
 - 
3 large carrots, peeled and chopped
 - 
3 medium Yukon Gold potatoes, peeled and cubed
 - 
2 tablespoons tomato paste
 - 
4 cups low-sodium beef broth
 - 
2 bay leaves

4 sprigs fresh thyme (or 1 tsp dried)
 
Instructions

Pat beef dry and season with salt and pepper. Toss with flour to coat evenly.

In a large Dutch oven, heat olive oil over medium-high. Sear beef in batches until browned on all sides. Set aside.

Add onions, celery, and garlic to the pot. Sauté for 5–6 minutes until softened.
