- 2 tbsp butter
- 1/2 cup diced onions
- 1/2 cup diced bell peppers (any color)
- 1/4 cup beef broth

Instructions
Step 1: Bake the Potatoes
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes clean and pat them dry. Prick each potato several times with a fork.
- Rub the potato skins with olive oil and sprinkle them with salt.
- Bake for 45-60 minutes, or until fork-tender.
Step 2: Prepare the Mashed Potatoes
- Once baked, carefully slice each potato in half lengthwise and scoop out most of the fluffy potato into a bowl, leaving a thin layer inside the skins.
- Add butter, sour cream, milk, and cheddar cheese to the bowl. Season with salt and pepper.
- Mash the mixture until smooth and creamy, then spoon it back into the potato skins. Keep warm in the oven at 200°F (90°C).
