Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon black pepper

1 1/4 cups shredded sharp cheddar cheese

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh chives

1 teaspoon chopped fresh rosemary (or thyme)

2 large eggs

3/4 cup whole milk or buttermilk

1/4 cup olive oil or melted unsalted butter

1 teaspoon Dijon mustard (optional)


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper if desired.

2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and black pepper. Stir in the shredded cheese and chopped herbs.

3. In a separate bowl, whisk eggs, milk or buttermilk, olive oil or butter, and Dijon mustard (if using).

4. Pour the wet ingredients into the dry and fold gently with a spatula until just combined.

5. Spoon the batter into the loaf pan, smoothing the top. Optionally sprinkle with extra cheese and herbs.

6. Bake for 45–50 minutes or until a toothpick inserted comes out clean.

7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
