- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup enchilada sauce
- 2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup diced tomatoes
- 1/4 cup finely chopped red onion
- Fresh cilantro, chopped (to garnish)

Instructions
