Ingredients
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon crushed red pepper flakes
½ teaspoon salt
¼ teaspoon black pepper
1 can (28 ounces) whole peeled San Marzano tomatoes
½ teaspoon sugar (optional, to taste)
Instructions
1. Heat olive oil in a medium saucepan over medium heat.
2. Add minced garlic and sauté for about 30 seconds until fragrant.
3. Stir in tomato paste, oregano, basil, red pepper flakes, salt, and pepper. Cook for 1 minute.
4. Add the whole peeled tomatoes with their juices. Crush them gently in the pot.
5. Stir well and bring the mixture to a simmer.
6. Reduce heat and simmer for 20–25 minutes, stirring occasionally.
7. Taste the sauce and add sugar if needed. Adjust seasoning to taste.
8. For a smooth sauce, use an immersion blender or pulse in a regular blender.
9. Let it cool before storing or using on your pizza.
Notes
Use San Marzano tomatoes for best flavor and low acidity.
For extra depth, toast your spices briefly with tomato paste before adding the tomatoes.
The sauce thickens more as it cools, so don’t over-reduce it while simmering.
