Ingredients
2 tablespoons olive oil
1 medium onion chopped
3 cloves garlic minced
2 medium carrots sliced
2 celery stalks diced
2 cans (15 oz each) white beans drained and rinsed
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
2 cups spinach or kale chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes optional
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese optional
2 tablespoons fresh parsley chopped
Instructions
1. Heat olive oil in a large pot over medium heat. Sauté onion until soft, then add garlic.
2. Add carrots and celery and cook until slightly tender.
3. Stir in herbs and spices and cook briefly.
4. Add tomatoes and beans and mix well.
5. Pour in broth and simmer for 20–25 minutes.
