Ingredients

For the Honey Chipotle Chicken:

  • 2 large boneless, skinless chicken breasts
  • 2 tbsp chipotle peppers in adobo sauce (minced or blended)
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste

For the Corn Salsa:

  • 1 ½ cups corn kernels
  • ½ cup diced cherry tomatoes
  • ½ cup diced cucumber
  • ¼ cup finely chopped red onion
  • 1 small jalapeño, deseeded and minced
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro
  • Salt to taste

Optional Bowl Base and Toppings:

  • Cooked rice, quinoa, or salad greens
  • Avocado slices or guacamole
  • Extra lime wedges
  • Crumbled queso fresco or feta cheese

Instructions

  1. Blend chipotle peppers, honey, olive oil, lime juice, garlic, cumin, paprika, salt, and pepper into a smooth marinade.
  2. Marinate chicken in the mixture for at least 30 minutes (up to 8 hours).
  3. In a bowl, mix all corn salsa ingredients and refrigerate.
  4. Grill chicken on medium-high heat for 5–7 minutes per side until fully cooked. Rest before slicing.
  5. Assemble bowls with your choice of base, add salsa and sliced chicken.
  6. Garnish with avocado, lime, and cheese if desired. Serve warm.
