Ingredients

  • 6 bone-in or boneless chicken thighs
  • 1/2 cup honey
  • 1/2 cup soy sauce (low sodium recommended)
  • 4 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 12 tablespoons water (for slurry)
  • 1 teaspoon sesame seeds (optional garnish)
  • Chopped parsley or green onions (optional garnish)

Instructions

  1. Pat the chicken dry with paper towels.
  2. (Optional) Sear chicken in a skillet until lightly browned.
  3. In a bowl, whisk together honey, soy sauce, garlic, vinegar, and sesame oil.
  4. Place chicken in the slow cooker and pour sauce over it.
  5. Cover and cook:
    • On LOW for 6–7 hours
    • Or on HIGH for 3–4 hours
  6. Mix cornstarch and water to create a slurry.
  7. Stir slurry into sauce 15–20 minutes before serving to thicken.
  8. Garnish with sesame seeds and chopped herbs if desired.
  9. Serve with rice, noodles, or vegetables.
