Ingredients
- 1.5 lbs baby potatoes, halved
- 2 tbsp Dijon mustard
- 2 tbsp honey
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh rosemary (or thyme), chopped
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and dry the potatoes, then cut them into halves or quarters for even roasting.
- In a large bowl, whisk together Dijon mustard, honey, olive oil, minced garlic, salt, and black pepper.
- Toss the potatoes in the honey mustard mixture until fully coated.
- Spread the potatoes on the prepared baking sheet in a single layer.
- Roast for 35-40 minutes, flipping them halfway through, until crispy and golden brown.
- Remove from the oven and sprinkle with fresh rosemary.
