Ingredients

  • 1.5 lbs baby potatoes, halved
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary (or thyme), chopped

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the potatoes, then cut them into halves or quarters for even roasting.
  3. In a large bowl, whisk together Dijon mustard, honey, olive oil, minced garlic, salt, and black pepper.
  4. Toss the potatoes in the honey mustard mixture until fully coated.
  5. Spread the potatoes on the prepared baking sheet in a single layer.
  6. Roast for 35-40 minutes, flipping them halfway through, until crispy and golden brown.
  7. Remove from the oven and sprinkle with fresh rosemary.
