Ingredients

  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil and cook rigatoni according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Prepare the Chicken: Season the chicken cubes with salt and pepper. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken for 5-7 minutes until golden and cooked through. Set aside.
  3. Sauté the Vegetables: In the same skillet, add the remaining olive oil and sliced carrots. Cook for 3-4 minutes until slightly softened. Add minced garlic and cook for another minute.
  4. Make the Honey Pepper Sauce: Reduce the heat to medium and add butter to the skillet. Once melted, stir in honey, soy sauce, and black pepper. Let the sauce simmer for 2-3 minutes until slightly thickened.
  5. Combine Everything: Return the chicken to the skillet and toss in the sauce. Add the cooked pasta and stir well to ensure everything is coated. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  6. Garnish and Serve: Sprinkle chopped green onions on top and serve warm. Enjoy this sweet and savory masterpiece!
