Ingredients

4 boneless skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

0.5 teaspoon smoked paprika

salt and freshly ground black pepper to taste

0.5 cup hot honey

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

0.5 teaspoon red pepper flakes (optional)

0.75 cup crumbled feta cheese

1 tablespoon butter (optional)

fresh rosemary or thyme for garnish


Instructions

1. Pat chicken breasts dry, pound for even thickness, and season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.

2. In a small saucepan over low heat, combine hot honey, apple cider vinegar, Dijon mustard, and red pepper flakes. Simmer 4–5 minutes until slightly thickened. Stir in butter if using.

3. Heat olive oil in a cast iron or oven-safe skillet over medium-high. Sear chicken 3–4 minutes per side until golden brown.

4. Brush or spoon glaze over chicken and transfer skillet to a preheated oven at 375°F (190°C). Bake 15–18 minutes until internal temperature reaches 165°F.

5. During the last 5 minutes of baking, top each piece with crumbled feta and return to oven.

6. Let chicken rest 5 minutes. Drizzle with extra glaze and garnish with rosemary or thyme before serving.

Let the chicken rest before slicing to lock in moisture.

Use block feta packed in brine for best texture and flavor.
