Ingredients

2 large eggs

1 corn tortilla

1/2 avocado, sliced

1/3 cup fresh salsa

2 tablespoons queso fresco or crumbled feta cheese

1 tablespoon fresh cilantro, chopped

1 teaspoon olive oil or butter

Optional: lime wedges, hot sauce, refried beans, or sour cream for serving


Instructions

1. Heat a dry skillet over medium heat. Toast the tortilla for 30–60 seconds on each side until slightly crispy. Remove and set aside.

2. If making salsa from scratch, blend tomatoes, garlic, onion, jalapeño, lime juice, cilantro, and salt until smooth. Simmer for 10–15 minutes to thicken and enhance flavor. Warm store-bought salsa if using.

3. In a skillet, heat olive oil or butter over medium heat. Crack in the eggs and cook until whites are set but yolks remain runny, about 3–4 minutes.

4. Place the toasted tortilla on a plate, spread with salsa, and top with the fried eggs.

5. Arrange avocado slices around the eggs. Sprinkle with cheese, cilantro, salt, and pepper.

6. Garnish with lime, hot sauce, or sour cream if desired. Serve immediately.

Notes

Always use ripe avocados and fresh eggs for the best texture and flavor.

Toast the tortilla just enough to be crisp without becoming too hard.
