Ingredients

  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (113g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups (240g) powdered sugar
  • 2 tablespoons milk or heavy cream (if needed)



Instructions

  1. Caramelize the Sugar – In a heavy-bottomed saucepan over medium heat, melt the sugar while stirring constantly until it turns amber.
  2. Add Cream and Butter – Slowly pour in the heavy cream while stirring. Then, add the butter and mix until smooth. Remove from heat and stir in vanilla and salt. Let cool for 10-15 minutes.
  3. Mix with Powdered Sugar – In a large bowl, sift the powdered sugar. Gradually add the cooled caramel mixture while mixing with a hand or stand mixer until smooth.
  4. Adjust Consistency – If too thick, add milk or heavy cream one tablespoon at a time until desired consistency is reached.
  5. Use and Enjoy – Spread over cakes or cupcakes, or use a piping bag for decoration.
