Ingredients

1 lb ground beef

1 medium yellow onion, diced

2 garlic cloves, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups green enchilada sauce

8 flour tortillas (8-inch)

2 cups shredded cheese (Monterey Jack or a blend)

Optional: 1/2 cup chopped red onion

Optional: 1/4 cup sweet corn

Optional: 1 jalapeño, sliced

Optional: Fresh cilantro for garnish

Optional: Lime wedges for serving

Instructions

1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and spread a small amount of enchilada sauce on the bottom.

2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 3-4 minutes.

3. Stir in garlic and cook for 30 seconds. Add ground beef and cook until browned and fully cooked, breaking it apart as it cooks.

4. Add cumin, chili powder, salt, and pepper. Stir to combine and cook for 1 more minute. Remove from heat and let it cool slightly.

5. Warm tortillas slightly to make them pliable. Spoon the beef mixture down the center of each tortilla, sprinkle with a bit of cheese, and roll tightly.

6. Place the enchiladas seam-side down in the baking dish. Pour remaining enchilada sauce evenly over the top and sprinkle with remaining cheese.

7. Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until cheese is melted and bubbly.

8. Garnish with red onion, sweet corn, jalapeño slices, cilantro, and lime wedges. Serve hot and enjoy!

Notes

Warm your tortillas before assembling to prevent cracking and make rolling easier.

You can swap ground beef with ground turkey, chicken, or even beans for a vegetarian version.

Don’t forget the garnish—fresh toppings like cilantro and lime really brighten the whole dish.
