Ingredients
For the Brownie Base:
- 1/2 cup (1 stick) unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the Pecan Pie Filling:
- 3/4 cup chopped pecans
- 1/3 cup brown sugar
- 2 tablespoons unsalted butter, melted
- 1 large egg
- 1 tablespoon maple syrup or corn syrup
- 1/2 teaspoon vanilla extract
- A pinch of salt
Optional Toppings:
- Whole pecans for garnish
- Melted chocolate for drizzling
- Sea salt flakes
Instructions
- Preheat & Prepare: Preheat oven to 350°F (175°C). Grease a mini muffin tin or use liners.
- Make the Brownie Batter: In a bowl, whisk together melted butter, granulated sugar, and brown sugar. Add eggs and vanilla extract, mixing until combined. In another bowl, sift together flour, cocoa powder, salt, and baking powder, then fold into the wet mixture until just combined.
- Fill the Muffin Tin: Spoon about 1 tablespoon of batter into each muffin cup, filling halfway.
- Prepare the Pecan Filling: In a bowl, mix brown sugar, melted butter, egg, maple syrup, vanilla, and salt. Stir in chopped pecans.
- Top & Bake: Spoon a small amount of pecan filling onto each brownie cup. Bake for 18-20 minutes until the edges are set.
- Cool & Garnish: Let cool for 5 minutes before transferring to a wire rack. Optionally, drizzle melted chocolate and top with whole pecans.
