Ingredients
24 cocktail sausages
12 rashers streaky bacon, halved
3 tablespoons honey
2 tablespoons wholegrain mustard
1 tablespoon Dijon mustard
2 tablespoons brown sugar
1 tablespoon soy sauce
0.5 teaspoon black pepper
Fresh thyme sprigs (optional)
Optional: pinch chili flakes
Optional: 1 teaspoon balsamic vinegar
Instructions
1. Preheat the oven to 200°C (390°F) or 180°C (fan). Line a baking tray with parchment or foil and place a wire rack on top.
2. Cut each bacon rasher in half and wrap around the sausages, placing seam-side down on the rack.
3. In a mixing bowl, whisk together the honey, wholegrain mustard, Dijon mustard, brown sugar, soy sauce, and black pepper. Add chili flakes or balsamic if desired.
4. Lightly brush the sausages with the glaze. Don’t overdo it — a thin layer is perfect.
5. Bake for 15 minutes, then remove from oven and brush again with more glaze.
6. Return to the oven for another 10–15 minutes, until sticky and caramelized.
7. Let cool slightly, sprinkle with thyme if using, and serve warm.
8. Optional: Serve with extra glaze or dipping sauce on the side.
