Ingredients

  • 1 to 1.5 lb pork tenderloin, trimmed
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tsp chopped fresh rosemary (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat the pork tenderloin dry and trim off any silver skin.
  3. In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
  4. Rub olive oil over the pork, then coat with the seasoning mix.
  5. Heat an oven-safe skillet over medium-high heat. Sear the pork on all sides until browned (1–2 minutes per side).
  6. Transfer the skillet to the oven and roast for 15–20 minutes, or until internal temperature reaches 145°F (63°C).
  7. Remove from oven and let rest for 5–10 minutes before slicing.
  8. Garnish with rosemary if using, and spoon pan juices over slices to serve.
