Ingredients

  • 1 lb kielbasa sausage, sliced into 1/2-inch rounds
  • 3 cups diced Yukon Gold potatoes (or frozen diced potatoes)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 small onion, finely chopped
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh potatoes, peel and dice them, then parboil in salted water for 8 minutes. Drain and set aside.
  3. In a skillet, melt the butter and sauté the chopped onion until translucent.
  4. Add the kielbasa slices to the skillet and sear lightly for extra flavor. Remove from heat.
  5. In a large bowl, mix the sour cream, cream of chicken soup, shredded cheese, and sautéed onions.
  6. Stir in the diced potatoes until fully coated.
  7. Transfer the mixture to a greased 9×13-inch baking dish.
  8. Arrange kielbasa slices evenly over the top, pressing them in slightly.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake an additional 15–20 minutes, until bubbly and golden.
  11. Let rest for 5–10 minutes before serving.
