Description
A hearty and comforting baked casserole loaded with smoky kielbasa sausage, tender potatoes, and a rich, creamy cheese sauce. Perfect for family dinners, potlucks, or meal prep.
Ingredients
- 1 lb kielbasa sausage, sliced into 1/2-inch rounds
- 3 cups diced Yukon Gold potatoes (or frozen diced potatoes)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1 small onion, finely chopped
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- If using fresh potatoes, peel and dice them, then parboil in salted water for 8 minutes. Drain and set aside.
- In a skillet, melt the butter and sauté the chopped onion until translucent.
- Add the kielbasa slices to the skillet and sear lightly for extra flavor. Remove from heat.
- In a large bowl, mix the sour cream, cream of chicken soup, shredded cheese, and sautéed onions.
- Stir in the diced potatoes until fully coated.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Arrange kielbasa slices evenly over the top, pressing them in slightly.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 15–20 minutes, until bubbly and golden.
- Let rest for 5–10 minutes before serving.
- Garnish with chopped parsley if desired.
