Description

Turn your holiday leftovers into a cozy comfort meal with this creamy, rich Leftover Garlic Mashed Potato Soup. It’s the ultimate quick dinner or lunch idea that transforms extra mashed potatoes into a velvety bowl of goodness. Ideal for busy weeknights or when you’re craving something warm and satisfying, this easy recipe is filled with sharp cheddar, sautéed onions, and fresh herbs. If you’re looking for healthy snack options or fast food ideas, this soup checks all the boxes with its simple steps and customizable ingredients.

Ingredients

2 ½ cups leftover garlic mashed potatoes

1 medium onion, chopped

2 cloves garlic, minced

2 tablespoons butter

2 ½ to 3 cups chicken or vegetable broth

1 cup whole milk or cream

1 cup shredded cheddar cheese

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chopped fresh thyme or parsley

Instructions

1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5–7 minutes.

2. Stir in the minced garlic and cook for another minute until fragrant.

3. Add the mashed potatoes and stir well to combine with the onions and garlic.

4. Gradually pour in the broth, stirring constantly to break up the mashed potatoes and create a smooth consistency.

5. Once the soup starts to simmer, add the milk or cream and continue to stir. Simmer for 5–10 minutes.

6. Lower the heat and stir in the shredded cheddar cheese until melted and fully incorporated.

7. Season with salt and pepper to taste.

8. Optional: Blend with an immersion blender for a smoother texture.

9. Ladle into bowls and garnish with extra cheese and fresh herbs. Serve hot.

Notes

Use warm mashed potatoes for easier mixing and smoother soup.

Don’t add all the broth at once—start with less and adjust to your desired thickness.

For a dairy-free version, use plant-based milk and cheese alternatives.
