Golden, crisp, and irresistibly cheesy, these puffs are the perfect way to transform leftover mashed potatoes into a new favorite snack or side dish. Packed with cheddar, parmesan, and chives, each bite is fluffy inside with a crunchy edge—perfect for dipping, sharing, or savoring solo.

Ingredients

  • 2 cups leftover mashed potatoes
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 tbsp chopped fresh chives or green onions
  • Salt and pepper to taste

Optional Add-ins:

  • 1/4 tsp garlic powder or onion powder
  • 1/4 cup finely chopped cooked bacon
