Ingredients

2 boneless skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon lemon juice

1 teaspoon lemon zest

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon butter

1 cup heavy cream

1 cup grated Parmesan cheese

8 ounces rotini or fusilli pasta

2 tablespoons chopped fresh parsley

Salt to taste

Black pepper to taste


Instructions

1. Cook pasta in salted boiling water until al dente. Drain and reserve 1/2 cup of pasta water.

2. Cut chicken into bite-sized pieces. Season with Cajun seasoning, olive oil, salt, and pepper.

3. Heat a skillet over medium-high. Sear chicken for 5–7 minutes until golden and fully cooked. Add lemon juice and zest, toss, and set aside.

4. In the same skillet, lower heat and add butter and garlic. Sauté until fragrant, about 1 minute.

5. Pour in heavy cream and stir. Add Parmesan cheese and mix until melted and smooth.

6. Season sauce with salt, pepper, and chopped parsley. Add pasta and a splash of reserved pasta water if needed.

7. Simmer pasta in sauce for 1–2 minutes. Remove from heat.

8. Top pasta with Cajun chicken bites. Garnish with more parsley, Parmesan, and a crack of black pepper. Serve hot.

Notes

Use freshly grated Parmesan for the smoothest, creamiest sauce.

Don’t overcook the chicken—once it’s golden and no longer pink, it’s ready.
