1/2 cup shredded mozzarella cheese
2 tbsp mayonnaise
1 tbsp unsalted butter, softened (plus more for pan)
1/2 tsp lemon zest
1 tsp fresh chives, finely chopped (plus extra for garnish)
1 pinch smoked paprika (optional)

Instructions
1. In a bowl, combine lobster meat, mayonnaise, lemon zest, chives, paprika (if using), salt, and pepper. Mix gently.
