Ingredients

  • 12 oz penne pasta
  • 1.5 lbs chicken breast, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium-high heat, add olive oil. Season chicken pieces with salt and pepper, then sear until golden brown and fully cooked. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds).
  4. Add sun-dried tomatoes and cook for another minute.
  5. Pour in chicken broth, scraping up any browned bits, then stir in heavy cream.
  6. Bring to a gentle simmer, then add Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until slightly thickened.
  7. Add the cooked chicken and spinach to the sauce. Simmer until spinach wilts.
  8. Toss in the cooked pasta, stirring until everything is fully coated in the creamy sauce. Adjust seasoning as needed.
  9. Serve hot, garnished with extra Parmesan if desired!
