Ingredients

For the Chicken & Pasta:

  • 2 large chicken breasts, boneless and skinless (cut into bite-sized chunks)
  • 8 oz penne pasta (or similar)
  • 1 tbsp olive oil (or sun-dried tomato oil)
  • Salt & pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

For the Sauce:

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 cup baby spinach (optional)

Garnish:

  • Fresh basil leaves
  • Extra parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil. Cook penne until al dente. Drain and set aside.
  2. Season chicken with garlic powder, Italian seasoning, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high. Sear chicken pieces for 4–5 minutes per side until golden. Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and cook for 1 more minute.
  5. Pour in chicken broth, scraping up any bits from the bottom. Simmer for 2–3 minutes.
  6. Stir in heavy cream and let it warm. Add parmesan gradually, whisking until smooth.
  7. Return chicken to the pan. Add spinach and cook until wilted.
  8. Add cooked pasta. Toss to coat in the sauce. Let it simmer together for 1–2 minutes.
  9. Garnish with basil and more parmesan. Serve hot.
