Ingredients
For the Chicken & Pasta:
- 2 large chicken breasts, boneless and skinless (cut into bite-sized chunks)
- 8 oz penne pasta (or similar)
- 1 tbsp olive oil (or sun-dried tomato oil)
- Salt & pepper, to taste
- 1 tsp garlic powder
- 1 tsp Italian seasoning
For the Sauce:
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/2 tsp crushed red pepper flakes (optional)
- 1 cup baby spinach (optional)
Garnish:
- Fresh basil leaves
- Extra parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Cook penne until al dente. Drain and set aside.
- Season chicken with garlic powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium-high. Sear chicken pieces for 4–5 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds. Add sun-dried tomatoes and cook for 1 more minute.
- Pour in chicken broth, scraping up any bits from the bottom. Simmer for 2–3 minutes.
- Stir in heavy cream and let it warm. Add parmesan gradually, whisking until smooth.
- Return chicken to the pan. Add spinach and cook until wilted.
- Add cooked pasta. Toss to coat in the sauce. Let it simmer together for 1–2 minutes.
- Garnish with basil and more parmesan. Serve hot.
