- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups egg noodles
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 cups fresh spinach
Instructions
- In a large pot, heat olive oil and butter over medium heat. Add minced garlic and sun-dried tomatoes, sautéing for 1-2 minutes until fragrant.
- Pour in the chicken broth, then add shredded chicken, Italian seasoning, red pepper flakes, salt, and black pepper. Simmer for 10 minutes.
- Stir in the egg noodles and cook according to package instructions (about 6-8 minutes) until tender.
- Lower the heat and stir in heavy cream and parmesan cheese, letting them melt into the broth. Simmer for 2-3 minutes.
