Ingredients
1 lb large shrimp peeled and deveined
1 tbsp olive oil
0.5 tsp smoked paprika
0.5 tsp salt
0.25 tsp black pepper
0.25 tsp crushed red pepper flakes
2 tbsp unsalted butter
4 cloves garlic minced
0.5 cup sun-dried tomatoes chopped
1 cup heavy cream
0.5 cup low-sodium chicken broth
0.5 cup freshly grated Parmesan cheese
0.5 tsp Italian seasoning
Salt and pepper to taste
8 oz fettuccine
Water for boiling pasta
Fresh parsley chopped
Juice of 0.5 lemon optional
Extra Parmesan optional
Crushed red pepper optional
Instructions
1. Bring a large pot of salted water to a boil. Add fettuccine and cook until al dente. Reserve 0.5 cup pasta water, then drain and set pasta aside.
2. Pat shrimp dry. Toss with olive oil, smoked paprika, salt, black pepper, and red pepper flakes.
3. Heat a large skillet over medium-high. Sear shrimp for 2–3 minutes per side until pink and golden. Remove and set aside.
4. Lower heat to medium. Add butter to the same skillet. Sauté garlic and sun-dried tomatoes for 1–2 minutes until fragrant.
5. Add heavy cream and chicken broth. Simmer for 3–4 minutes. Stir in Parmesan cheese and Italian seasoning. Season to taste.
6. Toss cooked pasta into the sauce. Add pasta water a little at a time to loosen, if needed.
7. Return shrimp to skillet. Stir gently and warm for 1–2 minutes. Add lemon juice if desired.
8. Garnish with parsley, extra Parmesan, or red pepper flakes. Serve immediately.
