  • 200g feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach, roughly chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter (optional for extra richness)
  • 2 garlic cloves, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes (optional for a spicy kick)
  • Salt and black pepper to taste
  • Fresh parsley or chives for garnish

Instructions

 

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and grease your oven-safe skillet or baking dish with olive oil or butter.

  2. Cook the Vegetables: Heat 2 tablespoons of olive oil in the skillet over medium heat. Add cherry tomatoes and cook for 3-4 minutes until softened. Stir in minced garlic and spinach, cooking until the spinach wilts. Season with salt, pepper, and paprika.

  3. Add Feta and Bake: Spread the crumbled feta cheese evenly over the veggie mixture. Bake for 8-10 minutes until the feta softens and turns slightly golden.

  4. Add the Eggs: Remove the skillet from the oven and create small wells in the mixture. Crack one egg into each well. Sprinkle with oregano, red pepper flakes, and a pinch of salt and pepper.

  5. Final Bake: Return the skillet to the oven and bake for 7-9 minutes, or until the egg whites are set but yolks are slightly runny.

  6. Garnish and Serve: Remove from the oven and sprinkle with fresh parsley or chives. Serve immediately with crusty bread or warm pita.
