Description

Mississippi Mud Potatoes are a rich and creamy casserole made with tender potatoes, crispy bacon, melted cheddar cheese, sour cream, and green onions. It’s a comforting Southern-style side dish that doubles as a main when paired with hearty proteins.


Ingredients

  • 3 pounds russet or Yukon gold potatoes, chopped
  • 1 1/2 cups sour cream
  • 2 cups shredded cheddar cheese, divided
  • 6 slices bacon, cooked and crumbled
  • 3 green onions, chopped and divided
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a large baking dish.
  2. In a large bowl, mix sour cream, garlic powder, salt, pepper, 1 1/3 cups cheddar cheese, and half the green onions.
  3. Add chopped potatoes to the bowl and toss to coat.
  4. Spread potato mixture evenly in the baking dish.
  5. Top with remaining cheddar cheese and crumbled bacon.
  6. Bake for 35–40 minutes, until potatoes are tender and top is golden.
  7. Broil for 2–3 minutes for extra crispiness, if desired.
  8. Garnish with remaining green onions and let rest 5 minutes before serving.
