Ingredients
1 pound ground pork sausage
1/2 cup chopped onion
1/3 cup chopped red bell pepper
1/3 cup chopped green bell pepper (optional)
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups shredded sharp cheddar cheese
4 large eggs
1 cup whole milk
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
Fresh parsley or thyme for garnish (optional)
Instructions
1. In a skillet, cook sausage over medium heat until browned. Add onions and peppers, cooking until soft. Drain and let cool slightly.
2. In a bowl, combine shredded Monterey Jack and cheddar. Reserve 1/2 cup for topping.
3. In a separate bowl, whisk eggs and milk. In another bowl, mix flour, baking powder, salt, pepper, and garlic powder. Add dry ingredients to egg mixture and whisk until smooth.
4. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish. Add sausage mixture, then cheese (except topping). Pour batter over top.
5. Sprinkle remaining cheese. Bake 35–40 minutes until center is set and golden. A knife inserted should come out clean.
6. Let pie rest 5–10 minutes before slicing. Garnish with herbs if desired.
Notes
Let cooked sausage cool before mixing it with eggs to avoid scrambling them.
Freshly grated cheese melts better and gives a creamier finish.
You can prepare the entire pie the night before and bake in the morning.
