Ingredients

1 pound boneless skinless chicken breast

1 tablespoon cornstarch

1 tablespoon neutral oil

1 cup red bell pepper, chopped

1 cup yellow bell pepper, chopped

1 cup snap peas, trimmed

1 cup broccoli florets

0.5 cup carrots, julienned

0.25 cup green peas

2 tablespoons green onions, sliced

2 tablespoons fresh cilantro, chopped (optional)

2 cups cooked wild rice

1 tablespoon sesame seeds (optional)

0.25 cup low-sodium soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 teaspoons grated ginger

2 teaspoons minced garlic

1 teaspoon cornstarch

1 tablespoon water


Instructions

1. Cook 2 cups of wild rice according to package directions and set aside.

2. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic. In a separate cup, mix cornstarch with water to make a slurry.

3. Toss chicken pieces with 1 tablespoon cornstarch to coat evenly.

4. Heat 1 tablespoon oil in a skillet or wok over medium-high heat. Add the chicken and sauté until golden and cooked through, about 5–6 minutes. Remove and set aside.

5. In the same pan, stir-fry bell peppers, snap peas, broccoli, carrots, and green peas for 3–4 minutes until tender-crisp.

6. Return chicken to the pan. Pour in the teriyaki sauce and add the cornstarch slurry. Stir for 1–2 minutes until sauce thickens and coats everything.

7. Add the cooked wild rice or serve the stir-fry over it. Top with green onions, cilantro, and sesame seeds.

8. Serve hot and enjoy!

Notes

Marinate the chicken in teriyaki sauce for 15–30 minutes for deeper flavor.
