Ingredients
- 1 box (14.4 oz) graham crackers
- 2 boxes (3.4 oz each) instant vanilla pudding mix
- 3 cups whole milk
- 1 tub (8 oz) Cool Whip (or 2 cups homemade whipped cream)
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Prepare the Filling: In a large bowl, whisk together vanilla pudding mix and milk until smooth and thickened. Let it sit for a few minutes, then fold in Cool Whip.
- Layer the Graham Crackers: Arrange a single layer of graham crackers at the bottom of a 9×13-inch dish.
- Add the Filling: Spread half of the pudding mixture over the graham crackers, smoothing it out evenly.
- Repeat the Layers: Add another layer of graham crackers, followed by the remaining pudding mixture. Top with a final layer of graham crackers.
- Prepare the Chocolate Ganache: Heat the heavy cream until hot but not boiling. Pour over the chocolate chips and let sit for a minute, then stir until smooth.
- Top the Cake: Pour the chocolate ganache over the top layer of graham crackers and spread evenly.
- Chill: Cover and refrigerate for at least 4 hours, preferably overnight.
- Serve: Slice and enjoy chilled!
