1 1/2 cups finely chopped pecans

1/4 cup creamy almond butter or peanut butter
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch sea salt
1 cup chocolate chips
1 tablespoon coconut oil
Extra chopped pecans for garnish
Instructions
1. Toast chopped pecans in a skillet over medium heat for 3–5 minutes, stirring constantly, until fragrant. Let them cool.
2. In a food processor, combine pecans, graham cracker crumbs, chopped dates, cinnamon, and salt. Pulse until crumbly.
3. Add syrup, almond butter, and vanilla. Process until the mixture sticks together when pressed.
4. Scoop out 1 tablespoon of mixture and roll into balls. Place on a parchment-lined baking sheet.
5. Chill the balls in the refrigerator for 20 minutes to firm up.
6. Melt chocolate chips and coconut oil in the microwave in 30-second intervals, stirring until smooth.
7. Dip chilled balls into melted chocolate. Tap off excess and return to tray.
8. Sprinkle with extra chopped pecans while chocolate is wet.
9. Chill again for 15–20 minutes until chocolate sets.
