Ingredients
2 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1/2 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1/2 red onion, thinly sliced
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 cup dry white wine
3/4 cup heavy cream
1/2 cup grated Parmesan cheese
8 ounces angel hair pasta
2 tablespoons fresh parsley, chopped
4 lemon slices, for garnish
Instructions
1. Slice chicken breasts into thin cutlets. Season with salt and pepper, then dredge lightly in flour.
2. Heat olive oil in a large skillet over medium-high heat. Cook chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
3. In the same skillet, add a touch more oil if needed. Add sliced onions and bell peppers. Cook for 5–6 minutes until soft and caramelized.
4. Add garlic and sauté for 1 minute. Pour in the wine, deglaze the pan, and let simmer 2–3 minutes.
5. Stir in cream and butter, and cook 3–4 minutes until the sauce slightly thickens.
6. Cook angel hair pasta according to package instructions. Drain and set aside.
7. Add chicken back to the skillet, followed by the cooked pasta. Toss gently to coat everything in the sauce.
8. Sprinkle in Parmesan and stir to melt.
9. Plate pasta and chicken. Garnish with parsley and lemon slices.
10. Serve immediately and enjoy!
Notes
Use freshly grated Parmesan to avoid clumping and for best melt in the sauce.
You can prep chicken and veggies ahead to save time on a busy night.
Add crushed red pepper flakes for a little heat if you like a spicy kick.
