Ingredients
2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 teaspoon brown sugar
½ teaspoon smoked paprika
Salt and black pepper, to taste
8 oz fettuccine
1 tablespoon butter
1 tablespoon olive oil
3 garlic cloves, minced
¼ cup finely diced onion
1 ½ cups chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
1 tablespoon honey or maple syrup
½ to 1 teaspoon red pepper flakes
Fresh chopped parsley, for garnish
Optional: Squeeze of lemon juice, extra Parmesan, spinach or sun-dried tomatoes
Instructions
1. Pat the chicken dry and rub it with Cajun seasoning, brown sugar, smoked paprika, salt, and pepper.
2. Heat 1 tablespoon olive oil in a large skillet. Sear chicken on both sides for 4–5 minutes until golden and cooked through. Remove and let it rest.
3. In the same pan, add butter and olive oil. Sauté onion for 2–3 minutes, then add garlic for 30 seconds.
4. Pour in chicken broth, then stir in cream, Parmesan, honey, red pepper flakes, salt, and pepper. Simmer 5 minutes until slightly thickened.
5. Add uncooked fettuccine to the pan. Cook uncovered for 10–12 minutes, stirring often, until pasta is tender and sauce thickens. Add broth if needed.
6. Slice rested chicken. Stir into the pasta or layer on top.
7. Garnish with parsley, Parmesan, or a squeeze of lemon juice. Serve immediately.
