Ingredients
- 4 boneless, skinless chicken thighs (or breasts)
- 1 cup long-grain white rice
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon red chili flakes (adjust to taste)
- 1 cup diced bell peppers
- 1/2 cup diced tomatoes (canned or fresh)
- 2 cups chicken broth (preferably warm)
- 2 tablespoons olive oil
- Salt and black pepper, to taste

Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with smoked paprika, garlic powder, onion powder, chili flakes, salt, and pepper. Rub with olive oil.
