Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 1 cup long-grain white rice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon red chili flakes (adjust to taste)
  • 1 cup diced bell peppers
  • 1/2 cup diced tomatoes (canned or fresh)
  • 2 cups chicken broth (preferably warm)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with smoked paprika, garlic powder, onion powder, chili flakes, salt, and pepper. Rub with olive oil.
  3. In a large oven-safe skillet, sear chicken for 3–4 minutes per side until golden. Remove and set aside.
  4. In the same skillet, sauté bell peppers for 2–3 minutes. Add diced tomatoes and let simmer briefly.
  5. Stir in the rice and toast for 1 minute.
  6. Pour in warm chicken broth and mix well, scraping the bottom of the pan.
  7. Nestle seared chicken into the rice mixture.
  8. Cover with lid or foil and bake for 35 minutes.
  9. Uncover and bake for an additional 10–15 minutes until liquid is absorbed and top is golden.
  10. Let rest for 5 minutes, garnish with fresh herbs, and serve.
