Ingredients

1.5 lbs sirloin steak, cut into bite-sized cubes

1 tbsp olive oil

1 tbsp butter

3 garlic cloves, minced

Salt and freshly cracked black pepper, to taste

0.5 tsp smoked paprika (optional)

1 tsp Worcestershire sauce (optional)

8 oz rotini pasta

2 tbsp unsalted butter

2 garlic cloves, minced

0.75 cup heavy cream

1 cup freshly shredded mozzarella cheese

0.5 cup grated parmesan cheese

Salt and pepper, to taste

1 tsp Italian seasoning

0.25 cup reserved pasta water

Fresh chopped parsley, for garnish (optional)


Instructions

1. Bring a pot of salted water to a boil. Add rotini pasta and cook until al dente. Reserve 1/4 cup of the pasta water and drain. Set pasta aside.

2. Pat steak cubes dry. Season with salt, pepper, smoked paprika, and Worcestershire sauce if using. Toss to coat evenly.

3. Heat olive oil in a cast iron skillet over medium-high heat. Sear steak bites in a single layer for 1.5–2 minutes per side. Remove and set aside.

4. Add 1 tbsp butter and 3 minced garlic cloves to the pan. Sauté until fragrant, scraping the pan to deglaze. Return steak to coat briefly, then remove again.

5. Lower heat to medium. Add 2 tbsp butter and 2 minced garlic cloves to the same pan. Cook until fragrant (1 minute).

6. Stir in heavy cream and simmer for 2–3 minutes.

7. Whisk in mozzarella and parmesan. Stir until melted and smooth. Season with salt, pepper, and Italian seasoning. Thin sauce with pasta water as needed.

8. Add cooked pasta into the pan. Toss gently to coat in the sauce.

9. Plate the creamy noodles, top with steak bites, and garnish with parsley and cracked black pepper. Serve hot.

Notes

For the smoothest sauce, always use freshly shredded cheese.

Let steak rest after cooking to lock in moisture before serving.
