Ingredients
- 12 oz penne pasta (uncooked)
- 4 cups beef broth
- 1 cup heavy cream
- 1/2 cup BBQ sauce
- 8 oz steak (sirloin or ribeye, cubed)
- 6 oz smoked sausage (andouille or kielbasa, sliced)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1/2 tsp smoked paprika
- Red pepper flakes (optional)
- Salt & pepper to taste
- 1/2 cup shredded Parmesan cheese (optional)
- 1 tbsp fresh parsley, chopped (plus extra for garnish)
Instructions
- Heat oil in a large deep skillet or Dutch oven over medium-high heat. Sear steak cubes until browned on all sides, seasoning with salt, pepper, and a little Cajun seasoning. Remove and set aside.
- Add sliced sausage to the same pan. Brown until slightly crispy. Remove and set aside with steak.
- In the same pan, sauté onion until translucent. Add garlic and cook 30 seconds more.
- Deglaze with a splash of beef broth, scraping up the browned bits. Add remaining broth, BBQ sauce, heavy cream, Cajun seasoning, paprika, and red pepper flakes.
- Stir in uncooked penne pasta. Bring to a simmer, cover, and cook over medium-low heat for 12–15 minutes, stirring occasionally.
- Once pasta is al dente, return steak and sausage to the pan. Stir to combine and simmer uncovered for 3–5 minutes.
- Add Parmesan and parsley. Stir gently until creamy. Adjust seasoning to taste.
- Serve hot, garnished with extra parsley and cheese if desired.
