Ingredients
2 large boneless skinless chicken breasts
1 ½ tablespoons Cajun seasoning
1 tablespoon olive oil
1 tablespoon unsalted butter
Salt and black pepper to taste
10 oz linguine
4 cloves garlic minced
1 teaspoon red pepper flakes
1 ½ cups heavy cream
1 cup low-sodium chicken broth
1 ½ cups freshly grated mozzarella cheese
½ cup freshly grated parmesan cheese
1 tablespoon cream cheese (optional)
1 tablespoon chopped fresh parsley
Optional: chopped sun-dried tomatoes or crispy bacon bits for garnish
Instructions
1. Pat chicken dry and season both sides with Cajun seasoning, salt, and pepper.
2. Heat olive oil and butter in a deep skillet or Dutch oven over medium-high heat.
3. Sear chicken breasts for 5–6 minutes per side until golden brown and cooked through. Transfer to a plate to rest.
4. In the same pot, reduce heat to medium and add garlic and red pepper flakes. Sauté until fragrant, about 30 seconds.
5. Pour in chicken broth and scrape up any browned bits from the pan.
6. Add uncooked linguine and pour in the heavy cream. Stir to combine.
7. Bring to a simmer, cover, and cook for 10–12 minutes, stirring occasionally, until pasta is al dente.
8. Reduce heat to low. Stir in mozzarella, parmesan, and cream cheese. Mix until smooth and creamy.
9. Slice the rested chicken and nestle it into the pasta.
10. Garnish with fresh parsley and optional toppings. Serve immediately.
Notes
Freshly grated mozzarella ensures your sauce turns out smooth and melty — avoid pre-shredded cheese if possible.
Always let your chicken rest before slicing to keep it juicy and tender.
Cook pasta just to al dente, as it will soften further while absorbing the sauce.
