One Pot Marry Me Shrimp and Orzo Pasta

Description

A rich and creamy one-skillet pasta featuring tender orzo, seared shrimp, sun-dried tomatoes, and a garlicky parmesan cream sauce. Perfect for romantic dinners or easy weeknight meals.


Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp butter
  • Fresh parsley, chopped (for garnish)
  • Optional: juice of 1/2 lemon

Instructions

  1. Heat 1 tbsp olive oil in a deep skillet over medium-high heat. Season shrimp with salt and pepper, sear 1–2 minutes per side, then remove.
  2. Add remaining olive oil. Sauté garlic and red pepper flakes for 30 seconds.
  3. Stir in sun-dried tomatoes, cook for another minute.
  4. Add orzo, toast for 1–2 minutes, stirring often.
  5. Pour in broth and cream. Stir in Italian seasoning. Simmer uncovered for 8–10 minutes, until orzo is tender.
  6. Lower heat. Stir in parmesan and butter. Add shrimp back in, cook 1–2 minutes until heated through.
  7. Garnish with parsley and optional lemon juice. Serve hot.
