Description
A rich and creamy one-skillet pasta featuring tender orzo, seared shrimp, sun-dried tomatoes, and a garlicky parmesan cream sauce. Perfect for romantic dinners or easy weeknight meals.
Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1/2 cup sun-dried tomatoes, chopped
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 tbsp butter
- Fresh parsley, chopped (for garnish)
- Optional: juice of 1/2 lemon
Instructions
- Heat 1 tbsp olive oil in a deep skillet over medium-high heat. Season shrimp with salt and pepper, sear 1–2 minutes per side, then remove.
- Add remaining olive oil. Sauté garlic and red pepper flakes for 30 seconds.
- Stir in sun-dried tomatoes, cook for another minute.
- Add orzo, toast for 1–2 minutes, stirring often.
- Pour in broth and cream. Stir in Italian seasoning. Simmer uncovered for 8–10 minutes, until orzo is tender.
- Lower heat. Stir in parmesan and butter. Add shrimp back in, cook 1–2 minutes until heated through.
- Garnish with parsley and optional lemon juice. Serve hot.
