- 1 lb boneless, skinless chicken breast (diced)
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1½ cups dry pasta (rigatoni, penne, or elbow)
- 1 cup chicken broth
- ¾ cup spicy BBQ sauce
- ½ cup tomato sauce or crushed tomatoes
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper (optional)
- 1½ cups shredded cheddar cheese
- ½ cup mozzarella cheese
- Salt & black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions
- Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
- Add diced chicken, season with salt and pepper, and cook until browned (5–6 minutes). Remove and set aside.
- In the same pan, add diced red onion and garlic. Sauté for 2–3 minutes until fragrant.
- Return chicken to the pan. Add chicken broth, BBQ sauce, tomato sauce, smoked paprika, and cayenne. Stir well.
- Stir in the dry pasta, ensuring it’s mostly submerged in the liquid. Bring to a boil.
