Ingredients

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes
  • 2 cups rotini pasta (or similar short pasta)
  • 2 jalapeños, sliced (seeds removed for less heat)
  • 1 cup shredded sharp cheddar cheese
  • 2 cups beef broth
  • 1 cup whole milk
  • 1 tbsp olive oil
  • 1 small onion, diced (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add steak in a single layer. Sear for 2–3 minutes per side until browned. Remove and set aside.
  3. In the same skillet, add jalapeños (and onion, if using). Sauté 3–4 minutes until softened.
  4. Pour in beef broth and milk. Stir to deglaze the skillet.
  5. Add pasta and bring to a gentle boil. Reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally.
  6. Once pasta is al dente and liquid mostly absorbed, reduce heat to low.
  7. Gradually stir in shredded cheddar until melted and creamy.
  8. Return steak to the skillet and mix to combine. Simmer 2–3 minutes to reheat and blend flavors.
  9. Season with salt and pepper to taste. Let sit 1–2 minutes before serving.
