Ingredients

  • 8 oz penne pasta (uncooked)
  • 2 cups chicken broth (low sodium preferred)
  • 1 cup heavy cream
  • 2 cups cooked chicken breast, shredded or sliced
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 23 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Chopped parsley or basil for garnish (optional)

Instructions

  1. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant.
  2. Add the cooked chicken and pour in chicken broth. Season lightly with salt and pepper.
  3. Stir in the penne pasta, ensuring it’s mostly submerged. Cover with a lid and simmer over medium-low heat for 12–14 minutes, stirring occasionally.
  4. Once pasta is tender and most liquid is absorbed, reduce heat to low and stir in heavy cream.
  5. Add cheddar and Parmesan cheeses. Stir until the sauce is smooth and creamy.
  6. Let simmer for 2–3 minutes to thicken. Taste and adjust seasoning if needed.
  7. Remove from heat, garnish with fresh herbs, and serve hot.
