Ingredients
- 12 oz rigatoni pasta
- 1 lb ribeye or sirloin steak
- 3 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes (adjust to taste)
- 1 cup freshly grated Parmesan cheese
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley (optional)
- 1/2 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook rigatoni until al dente, drain, and reserve 1/2 cup pasta water.
- Pat the steak dry and season generously with salt and black pepper.
- In a large skillet, heat olive oil over medium-high. Sear steak 3–4 minutes per side until cooked to your desired doneness. Remove and let rest.
- In the same skillet, reduce heat to medium. Melt butter, then add minced garlic and red pepper flakes. Sauté 1–2 minutes until fragrant.
