Ingredients
4 bone-in, skin-on chicken thighs
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon paprika
0.5 teaspoon garlic powder
0.5 teaspoon onion powder
0.5 teaspoon dried thyme
Salt and pepper to taste
Juice of 0.5 lemon
1.5 pounds baby potatoes
2 tablespoons olive oil
4 cloves garlic minced
0.5 teaspoon salt
0.5 teaspoon black pepper
1 teaspoon dried parsley
0.5 cup grated Parmesan cheese
Chopped parsley or chives
Extra parmesan cheese
Instructions
1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment or foil.
2. In a bowl, mix the chicken thighs with olive oil, Cajun seasoning, paprika, garlic powder, onion powder, thyme, salt, pepper, and lemon juice. Rub to coat and let marinate for 15–30 minutes.
3. In another bowl, toss halved baby potatoes with olive oil, minced garlic, salt, pepper, parsley, and half of the parmesan.
4. Arrange chicken thighs skin-side up on the sheet pan. Scatter the potatoes around them in a single layer, cut side down.
5. Roast for 35–40 minutes or until chicken reaches 165°F internally and potatoes are golden.
6. Sprinkle remaining parmesan over the potatoes during the last 5–10 minutes of roasting.
7. Broil for 2–3 minutes for extra crisp, if desired.
8. Let the chicken rest 5 minutes before serving. Garnish with herbs and more parmesan if you like.
Notes
For crispier potatoes, always place them cut side down and give them space.
Freshly grated parmesan will melt and brown better than pre-shredded cheese.
