Ingredients

2 tablespoons olive oil

1 medium yellow onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

2 cans (28 oz each) crushed tomatoes

3 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried basil

1/2 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

3/4 cup heavy cream

2 tablespoons butter

Fresh basil leaves, for garnish

1/2 cup shredded cheese, for topping

1 cup croutons, for topping


Instructions

1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5–7 minutes.

2. Add minced garlic and cook for 30 seconds until fragrant.

3. Stir in tomato paste and cook for 2 minutes to deepen the flavor.

4. Pour in crushed tomatoes and vegetable broth. Stir to combine.

5. Add sugar, dried basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes.

6. Use an immersion blender to blend the soup until smooth. Or transfer to a blender in batches, then return to pot.

7. Stir in heavy cream and butter. Simmer on low for 5 more minutes.

8. Ladle into bowls and top with shredded cheese, croutons, and fresh basil.

9. Serve immediately.

Notes

Use high-quality canned tomatoes for the best flavor, preferably San Marzano.

Don’t skip the tomato paste—it adds concentrated flavor depth.

Add cream at the end to avoid curdling and maintain the soup’s silky texture.
